Competition Rules and Guidelines
- The first two rounds of the competition are elimination rounds. Bartenders will be provided with the names and ingredients prior to the competition. Round 1 is mandatory as it determines which competitors advance to Round 2. In round 2 bartenders will also be provided with the mixing instructions to prepare drinks. Finalists will then be selected to compete in the final round of the competition.
- Round 1 – The first round will start at 4:00 pm. Contestants must register at 3:00 pm and be present for a briefing at 3:30 pm. The six best contestants will go on to compete in Round 2.
- Rounds 2 and 3 - The second and third rounds will both be held as part of the night's event. Three (3) contestants will be eliminated at the end of Round 2 and only three (3) bartenders will go on to compete in the final round. The estimated start for round 2 is at 7:00 pm.
- In principle, only beverages and tools provided by the organizers are to be used by the contestants.
Contestants should note that all goods included on the grocery list will be available for use during the competition. See below for the Bartender Grocery List. If any contestant wishes to provide other LOCAL fruits, fresh juices and/or garnishes, he/she will be required to provide enough for all contestants to use.
Important Note: If contestants wish to use any item that is not included on this list, they must: first contact Romy Haylock via telephone or e-mail: romy@travelbelize.org and request permission to use the particular item. Once permission is granted, contestants will be required to provide enough of the approved item for the other competing bartenders.
- All rulings of the judges are final and not subject to change.
The bartender competition will consist of two elimination rounds and the final round.
Round #1 – Original Cocktails

The bartender has 10 minutes to prepare 3 original cocktails.
These cocktails will be judged on:

The recipes of the cocktails have to be handed to the judges at the time of briefing. Judges will compare to the actually prepared cocktail. Only the top six bartenders advance to round 2.
Round #2 – Speed Round
The bartender will be asked to prepare at least four of the following cocktails following the recipes and mixing methods provided. He can prepare the drinks in any preferred order but the drinks have to be "serve ready" at the same time.
Judging Speed Round
The Speed Round winner will be the bartender with the lowest time average. During the speed round the bartenders will receive deductions for the following:
- Spills: If the competitor spills on anything he will be penalized 5 seconds for each spill.
- Breakage: If the competitor breaks anything during the speed round he will be penalized 25 seconds for each item broken.
- Portion: If the bartender shorts or over pours (includes ice) any of the drinks he will be penalized 5 seconds. Glassware must contain adequate ice.
- Wrong/Missing Ingredients: If the bartender is missing or uses the incorrect ingredient for any of the drinks he will be penalized 5 seconds for each missing or incorrect ingredient.
- Wrong Procedures: If the bartender does not make the drink according to the correct procedure he will be penalized 20 seconds for each incorrect procedure.
- Wrong Garnish: If the bartender is missing or uses the incorrect garnish for any of the drinks, he will be penalized 5 seconds for each missing or incorrect garnish. Squeezes must be squeezed and wedges must be placed on the edge of the glass. Garnishes include straws and one sip stirrer for each drink.
Overall winner of the speed round receives:

The scores of Rounds 1 and 2 will be added and the 3 bartenders with the highest scores will proceed to the finals.
Round #3 – The Finals
The finalists will have to prepare 2 cocktails based on a mystery box of ingredients. These two cocktails will have to be prepared with different techniques (Frozen, shaken, stirred, layered, etc.).
The mystery box will have 4 ingredients. The contestants will have to pick 3 out of these 4 ingredients as the main ingredients for their cocktails.
- They will have 15 minutes to write a recipe and find a name for their 2 cocktails.
- They can use unlimited non-alcoholic, and no more than a total of 1 oz of alcoholic beverages from the main bar.
- The contestants get 10 minutes to prepare 2 each of each of their final cocktails.
- The bartenders will then be asked to prepare 20 mini samples of their drink ( not for judging purposes).
Judging – Finals
The contestants and their drinks will be judged on the same criteria as in Round #1.
